Bread Upma



I came across different versions of bread upma online. This is my version of bread upma with egg. You can have this for break fast or evening time snack. I missed adding coriander leaves in the pic. But you must add it for a good taste.

Preparation Time : 10 mins. Cook Time : 10 mins. Serves : 3

Ingredients :
10 slices of bread (white/brown)
1 small Onion
2 Green Chilly
2 tomatoes
1/2 teaspoon chilly powder
1 egg
1 teaspoon of lemon extract
7 to 8 stands of coriander leaves

For Seasoning :
2 tablespoon oil
1/4 teaspoon mustard seeds
1/2 teaspoon urad and channa dal
1/2 inch ginger piece

Preparation :
1. Cut the bread into cubes. Take off the crust if you don't want to add it.
2. Grate the ginger using the carrot shredder or by using a knife.
3. Cut the onion and tomatoes in to a fine pieces.
4. Wash the coriander leaves and finely chop it.

Method :
1. Heat oil in a large pan. Add the mustard seeds. When they pop add the Urad and channa dals. Saute it until turning to golden brown. Now add the ginger.
2. Add the onion and green chilies. Stir well until the onion turn translucent. Add the tomato with little salt. Stir it well until the tomatoes get cooked well and separate from the oil.
3. Add the chilly powder. Break the egg and add it. Stir it slightly so that you break only the egg's yellow; Before cooking the egg, add in the bread cubes and stir it well. The egg gets cooked along with the bread.
4. Add the lemon extract and the coriander leaves
