Cabbage Pulao



We always get a fresh cabbage here. As I am not a big lover of cabbage , I don't cook that often. That stays always in one corner in my fridge. It's very sad that I use it only when I am out of vegetables.So, I always look for better recipes using cabbage. Then I have come across this wonderful recipe.
Cabbage is incredibly nutritious;It helps reducing the bad cholesterol and very low in fat and calories.It is an excellent source of 'Vitamin C' and 'Vitamin K'.

I used Basmati rice for this recipe. For 1 cup of Basmati rice you need 1 1/2 to 1 3/4 cups of water.No problem if you are using other varieties of rice too.

Preparation Time : 10 min Cook Time : 20 min Serving : 4

Ingredients :
2 cups Basmati rice
2 cups Cabbage
2 1/4 cups water
1 cup coconut milk
1 Onion
4 Garlic pods
1/4 teaspoon Garam masala
1/4 teaspoon turmeric powder
2 teaspoons Ghee
5 green chilies
2 teaspoons lemon juice
Salt to taste

Seasoning :
2 teaspoons oil
2 cinnamon sticks (small)
2 cloves

Preparation :

1. Soak Basmati rice for 10 min and wash it once.If u soak for more time, the rice would go mashy.
2. Extract 1 cup of coconut milk from 1/2 cup of coconut. Slice cabbage into very thin length wise pieces.
3. Finely chop the green Chilies or grind it in a food processor with little water. Chop the onion length wise into thin pieces.

Method:
2. In a pressure cooker, Do the Seasoning (Oil + Cinnamon + Cloves); Add Rice, Garam Masala, half the salt and Turmeric. Fry this till moisture from rice is evaporated.
3. Add the coconut milk and water; Let it pressure cook. Once it is cooked, slightly stir it and Let it cool down for some time.
4. In a large pan, heat ghee. When hot add onion,green chili and the remaining salt; Fry till the onion is translucent. Add the cabbage and fry till it is half cooked (5 to 7 mins).
5. Stir in the cooked rice; Add the lemon juice and stir gently so that the rice won't break.

This recipe goes well with Raita.
