Coconut Milk Rice



My kid’s very favourite recipe. I like to prepare this especially for him.The only job is to extract the coconut milk; You can have a tasty rice without spending much of your time. I have not tried any accompanied dish for this rice so far.We used to have it as it is or with yogurt (curd). If you are taking with any gravy, make sure that does not contain more coconut. I am little conscious on the fat level.

I added, 2 teaspoons of Ghee.You may increase or decrease it according to your taste.

Cook Time : 20 mins. Serves : 3

Ingredients :
2 teaspoons oil
2 cups Basmati rice (Soak it for 10 mins. in water, wash & filter)
1 1/2 cup coconut milk + 1 3/4 cup of water
2 cinnamon stick (small)
2 cloves
2 cardamom
1 big onion (medium sized) – finely chopped
4 green chillies
2 table spoons ginger,garlic paste
2 teaspoons ghee

Method :
1. Split the coconut into 2 halves.Take one of the halves to extract 1 1/2 cup of coconut milk; if you feel it is big, you can use 3/4th of it. Shred the coconut. Grind it with 1 cup of water for the first time; Filter it and extract the coconut milk; Then add 1/2 cup of water, grind and filter it again. Finely chop the onion.Split open the green chillies.
2. Heat oil in a pan. Add cinnamon + cloves + cardamom. Add the ginger,garlic paste and sauté it.
3. Add the onions and green chillies and stir it well until the onion turn translucent.
4. Add the coconut milk+ water. Add the salt to taste. Allow it to boil once.
5. Add the Basmati rice. Stir it and check for salt. Now close the cooker and give your own whistle.

Note : Not recommended for people with cholesterol.
